New Smoothie Maker

Got my first smoothie maker :) technically it is just a blender, but it has a smoothie stirring tool and a nozzle so it serves right out of the blender :)



Since I am eating all raw today I figured today would be the perfect day to open my new toy...


For lunch I made what I like to call My wish i was on a vacation Smoothie...:p

1 frozen banana 1 cup unsweetened pineapple

1 cup orange juice, raw *add some ice depending on the consistency you prefer

BLUE HEAVEN!




It is such a rainy and gloomy day; I thought I'd brighten everyone up with some fun and delicious vegan cupcakes! I used the choc cream cheese recipe form The Joy Of Vegan Baking and made some minor adjustments..ie no cream cheese,more cocoa, etc
I made the frosting myself, it is a very sweet buttercream frosting and it's BLUE!!!

MOM: mmm I want that recipe!!!
DAN: they're so moist, these can't be vegan!
SO my rainy day is already getting better and I hope my cupcakes have cheered others up as well. I just can't wait to give one to my boyfriend, i think he'll love them!!!! peace.

sorry i haven't posted in so long. i have been so busy with school and applying for loans.

i made some choc chip cookies for my easter party and everyone loved them...vegan or not. it's a good classic choc chip recipe..
2 cups unbleached flour
2 tsp baking powder
1/2 tsp salt
vegan choc chips however many youd like
1 cup raw sugar
1/2 cup canola oil
1 teaspoon vanilla
1/4 cup water
DIRECTIONS: preheat oven to 350. in a large bowl mix together the flour, baking powder, and salt. when mixed add in the chips. make a well in the center and set aside.
In a medium bowl mix vegan sugar and oil. make sure this is mixed well then add vanilla and water. Now add the wet ixture to the dry and mix well but be careful not to overwork. Spoon onto ungreased cookie sheet then bake for 9 min. After nine min i usually go in two min increments until where i like them...normally i cook mine for 12 min on the top rack. ENJOY
makes about: 2 dozen delicious cookies.

Went to The Chicago Diner today!!! It's a wonderful vegetarian restaurant. The atmosphere is great, the people are really friendly, and the food is UNBELIEVABLY AMAZING!!!

The first photo here is my meal. I got the vegan chicken parmesan and mac and "cheeze". I also got a choc chip cookie dough shake which you can see in the second picture; It is honestly the BEST shake I have EVER had. I threw in a phot of my mom and I at the diner. My parents actually LOVED their meals and they are quite stand-offish to anything involving soy, tofu, or seitan. The next picture is my mom's meal. She got "chicken" enchiladas with black beans and brown rice, all vegan as well. This trip, as well as every trip to the chicago diner, was nothing less than amazing.

Breakfast: Bowl of Toasted Rice and soy milk


Lunch: Flax seed chips and black bean dip


Dinner: Not sure yet...maybe some pilaf.


Dessert: vegan brownies as seen on the left. The brownies were really simple...I just replaced the eggs with firm tofu. For every egg use 1/4 cup tofu. Firm works the best whereas silken tofu tends to leave the brownies way too mushy.

I know these don't look amazing, but they absolutely are. They're vegan peanut butter rice crispies. The recipe is from http://www.vegweb.com which is a GREAT place to get and share vegan recipes. They are so simple to make.
1 cup light or dark corn syrup
1 cup dark brown sugar
1 cup (preferably chunky) peanut butter
6-8 cups of rice crispies/ any rice cereal
Heat the brown sugar and corn syrup in a saucepan over medium heat until boiling. When boiling, remove fromheat and add peanut butter. Stir until smooth and mix in rice cereal. Once the cerealis mixed in, press the mixture into a 9x9 pan and allow to cool. ENJOY!

I'm really lacking in my picture taking, I apologize once again. I had a salad today and a banana for lunch. My boyfriend and I made some veggie tacos with morningstar grillers. We seasoned them up a bit a ta-da...vegan tacos. I put some black bean salsa on mine which added an extra kick. No photos this time, but i tend to eat veggie tacos often, so next time I promise. We also made some vegan butterscotch pudding!!! Now, this was unbelievable pudding! I got the recipe out of The Joy of Vegan Baking cookbook. Everythign I have made from this cookbook has been fantastic so far. This pudding was really easy to make and everyoen in my house loved it including the non-vegans. We put the butterscotch pudding in vegan graham cracker bowls. Below is a picture of my boyfriend enjoying some butterscotch pudding.

Bananas and strawberries for breakfast!!! First strawberries since SUMMER!!!! They weren't very ripe, but boy they were still delicious. I didn't end up taking pictures of everything I ate today, I'm sorry. My boyfriend and I made a vegan pizza for dinner. The dough was whole-wheat dough form trader joes. We added some morningstar grillers, green pepper, sauce, cauliflower, and black olives. It turned out pretty well. It needed to be rolled out more because it didn't get very crispy, but it still tasted great. I plan on buying the dough again and making it thinner and crispier.

I also had some flax seed tortilla chips from Trader Joes and some Tribe roasted red pepper hummus. If you have never tried hummus, I suggest going to your local grocery store and pickign some up... it's a great snack with some pretzels or chips.

I actually ate 2 more cookies throughout the day... I'll post the recipe on here eventually.
Multigrain Pilaf. This is a new find for me and I have been hooked since the first time I tasted it. It's a nice quick and easy vegan microwavable meal. I know it looks a little less than appealing, but don't be decieved it's a taste pleaser.

First entry.

I've decided to start this blog and post what I eat everyday. I'm a vegan and I am aware that there are other vegan food blogs, however, they always tend to be vegans who can cook. I mean cook these amazingly delicious looking vegan treats and meals that look like they came right out of the cookbook. I, on the other hand, am a college student living in Illinois with really no organic food stores around me to get any supplies and have little money to do so even if they did exist by me. I'll try to post photos of my meals on a daily basis. Enjoy. Peace.
